These easy, tasty biscuits are the first of my Christmas treats for the year and kids will have fun getting involved making them. The same principle would work with any plain/vanilla biscuit base but I like to use a simple one I found a while ago on the BBC good food website. Biscuits
- 250g butter
- 140g caster sugar
- 1 egg yolk
- 2 tsp vanilla extract
- 300g flour
Topping
- raspberry jam
- desiccated coconut
Cream together the butter and sugar. Beat in the egg yolk and vanilla. Mix in the flour, you’ll probably need to use your hands to get the last of it combined properly. If your kitchen is warm you might want to chill the dough for a bit before rolling out on a floured surface. Cut out into circles and bake at 160°c (fan) for around 15 minutes depending on thickness. Be careful not to overcook as these stay quite pale. Once cooled, hold each biscuit by its edge. Dip into a saucer of jam to cover the top and then into a saucer of coconut which will stick to the jam to give the snow ball appearance. If you want to get a really tidy finish I’d suggest warming and straining the seeds from the jam and sprinkling a little extra coconut on any spots where the jam shows but given that I do this with the boys we just get stuck in.
