This week I’m taking part in the Great Bloggers Bake Off, the brain child of The Crazy Kitchen and Mummy Mishaps, which involves watching the latest episode of The Great British Bake Off and then baking something to fit the weeks theme. This week covered sandwich cakes, angel food cakes and chocolate show stoppers so as I’ve never made an angel food cake before I thought I’d try that.
Of course, angel food cakes are normally made using a special tin and I don’t have one of those so I’ve adapted the basic Mary Berry recipe to make sure it would still cook properly and then decided to add a citrus twist to the sponge and a home made orange curd for the topping.

Thanks Helen, the curd was much quicker and easier than I thought. If anything I might reduce the sugar in it a bit as its adapted from a lemon curd recipe and of course the oranges weren’t as sour.

I actually think they are a bit more forgiving than the programme made out. I was a bit slapdash with mine (as I always am when baking and it still seems to have come out ok. The curd is a winner though, definitely going to do that again.

I like the idea of orange curd instead of lemon – you are braver than me making it in a normal tin. I’m going to have a go at angel food cake soon I think, although I won’t be making curd as I want the yolks for creme brulee 🙂
