Today – Hot Cross Brioche, a great easter breakfast.
I love a hot cross bun and I’m a big fan of brioche. In the run up to Easter it occurred to me that the combination of the two would make a great breakfast so I put together a shop bought brioche mix (I used Francine 375g mix but you could also follow a recipe from scratch like this one) and added hot cross bun fruit and spices. They turned out really nicely and were delicious warm with a little butter.
Additional Ingredients:
- 1/2tsp cinnamon
- 1/4tsp ground ginger
- 1/4tsp nutmeg
- 80g mixed dried fruit (I used sultanas and some mixed peel)
Method
- Add the spices to the dry brioche ingredients and make up the dough as per the instructions.
- Once it is ready to prove, mix in the fruit.
- Split the risen dough into a 6 muffin tray and cook for a few minutes less than is recommended for the loaf.
If you want to make a cross on the top, score a cross with a knife. Then mix up some flour and water until it is a pipeable consistency add draw it on either free hand from a spoon or with a piping bag.
