I’ve made a few different versions of chocolate sauce in the past. Most recipes are aimed at adults and use dark chocolate for a stronger tasting sauce. I wanted something a bit creamier for the boys to have on ice cream. I also didn’t want to faff about with a double boiler. So I have tweaked my technique to be done in a saucepan but without risking over heating the chocolate.
- A small spoonful of butter (approx 10g)
- 2 tbsp whole milk
- 50g milk chocolate buttons
- 1 tbsp golden syrup
- Melt the butter with the milk in a small saucepan on a very low heat.
- Move the pan off the heat (but leave the burner on). Add the chocolate buttons, stirring gently, and let the residual heat in the pan melt them.
- If you need a bit more heat then hold the pan briefly over the burner again (literally 5 seconds at a time) while continuing to stir.
- At the last minute add the syrup, stir through and serve right away.
This went down a storm today on pancakes with sliced strawberries. Yum!
